How to season your food properly

SEASONING ISN’T SPRINKLING, IT’S LAYERING.

Most home cooks under-season. A single shake of table salt or one dash of mixed herbs isn’t enough to bring out real depth of flavour.

Professionals season in layers.  Small touches added at different stages of cooking that build complexity.

Salt first — the foundation
Applied before cooking, salt penetrates and balances, drawing out natural juices and mellowing bitterness.

Herbs & spices next — the character
Heat transforms herbs and spices. Rosemary becomes aromatic, garlic turns nutty, and chilli softens into warmth. Adding them in layers means you catch these changes.

Finish with a flourish — the contrast
A final sprinkle gives crunch and brightness. Those last crystals dissolve on the tongue, delivering a lively pop of flavour.

“Salt has been prized for thousands of years, once valued as highly as gold. Roman soldiers were sometimes paid in salt which is the the root of the
word salary. For as long as humans have cooked, layering flavour has been the mark of skilled hands.”
